D’Ippolito Salvatore
Agricultural livestock farm

Our farm has been a livestock agricultural business for more than three generations, a sustainable reality that combines tradition and innovation.

In addition to caring for the well-being of our animals, we oversee every stage of the production process, from growing grains for feed and forage for our livestock to milking and cheese-making, ensuring authentic products.

Until 2020, the milk we produced was sold, but in the face of the unprecedented challenges imposed by COVID, we chose to respond by turning the milk into cheese, thus creating a product that further enhances the fruits of our labor. This decision not only allowed the farm to overcome market difficulties but also opened new avenues, strengthening the bond with our land and consumers.

The sweet pastures of our region give the cheese a unique and unmistakable flavor.
The combination of lush pastures, an unspoiled environment, and experience ensures that every bite tells the story of these mountains, reconnecting us with the roots of our culture.
Thanks to the milk from our sheep, we produce pecorino cheese, both plain and flavored with black pepper, chili, arugula, and olives, as well as coated in black pepper, commonly called "nero di Sicilia." Each product is the result of a careful process that merges tradition with modern tastes, respecting the quality of local raw ingredients. We have enhanced one of the most beloved products of our tradition, ricotta, which we sell fresh, and we also produce salted ricotta (with a more intense flavor, perfect for enriching typical dishes of our cuisine) and sweetened ricotta for pastry shops.
This farm manages to combine tradition and innovation, bringing to the table a genuine product made with high-quality raw materials, capable of delighting even the most discerning palates and showcasing the excellence of our region.
Our livestock is free-range, and we only bring the animals into the stables for milking. Once finished, they are returned to pasture in nature.
