"U Sfuagghiu"
Lo Sfoglio di Polizzi, known as "U Sfuagghiu" in the local Polizzi dialect, is a traditional dessert that stands out from other cheese-based cakes typical of various Sicilian regions. This exquisite puff pastry cake, renowned for its exceptional flavor, is filled with fresh sheep’s cheese (tuma) enriched with cinnamon, chocolate, and sugar. Two important facts: U Sfuagghiu should not be stored in the refrigerator and is protected by the "Consortium for the Protection and Promotion of Sfoglio", which includes all the pastry shops in Polizzi. The preparation of this dessert is an art passed down from generation to generation. The history of Sfoglio dates back to the 14th-15th centuries when the nuns of the Monastery of Santa Margherita, located in the Badia Vecchia area of Polizzi Generosa, invented this delicacy.
The origin of the dessert is linked to the celebration of Saint Benedict and the visit of Count Roger to Polizzi during the summer, a time when ricotta traditionally used in sweet preparations was of poor quality, being watery and unpalatable. The nuns then decided to use sheep's tuma, creating this unique dessert that has gained fame and appreciation over the centuries.
